Open in Pepper →An egg bake is the cheapest way I know to feed a crowd without standing at the stove flipping eggs one at a time. Eggs, milk, whatever meat and cheese is in the fridge, and the oven does the rest.
Cooks on Pepper reach for these on Sunday mornings when the house is full, on busy weeknights when breakfast for dinner sounds right, and when they want something made ahead for a slow morning.
Every recipe here is a pan of eggs with something good in it — Sausage, Egg & Cheese Breakfast Cobbler, Tater Tot Egg Bake, Potato Bacon and Egg Casserole, a Mexican Egg Bake with jalapeños, and a Baked Cottage Cheese and Egg Casserole for something lighter.
Cook the meat first
Brown sausage or bacon and drain it before it goes in the pan, about 6 to 8 minutes, so the eggs don't turn greasy.
Squeeze the spinach dry
Wilt fresh spinach and press out the water with paper towels, or your bake will weep at the bottom of the dish.
Bake at 350 until set
Most 9x13 egg bakes need 35 to 45 minutes; the center should barely jiggle and a knife should come out clean.
Let it rest 10 minutes
Pull it out and wait 10 minutes before cutting so the squares hold together on the plate.
