Open in Pepper →Cornbread casserole is the dish that stretches. A box of mix, a can of corn, whatever meat is in the fridge, and you've got a hot pan on the table with enough left over for tomorrow's lunch.
Cooks on Pepper reach for these on the nights nobody agrees on dinner, when the school calendar is full, or when they need something to carry to a potluck that still tastes good an hour later.
Every recipe here starts with cornbread and goes its own way — the plain, buttery Cornbread Casserole with creamed corn, Mexican Cornbread Casserole with taco seasoning, Cowboy Cornbread Casserole with ground beef and Rotel, Sloppy Joe Cornbread Casserole, Southern Sweet Corn Casserole with Bacon, and Cajun Crawfish Cornbread Casserole.
Drain the beef well
Brown 1 to 2 pounds of ground beef and pour off the grease before it goes in the pan, or the cornbread layer turns soggy underneath.
Use room temperature eggs
Cold eggs and sour cream make the batter clump. Set them out 30 minutes ahead so everything stirs together smooth.
Add cheese at the end
Sprinkle shredded cheese over the top during the last 8 to 10 minutes of baking so it melts without browning too hard.
Let it rest ten minutes
Pull the pan out and give it 10 minutes on the counter before scooping, or the middle runs across the plate.
