The Cookie You Can Make Any Night

Oatmeal cookies are the ones you can pull together without a trip to the store. Butter, brown sugar, oats, and whatever's in the pantry — that's most of the batch right there.

Cooks on Pepper reach for these when the kids want something warm after school, when there's a bake sale in the morning, or when a bunch of bananas has gone too soft to eat plain.

Every recipe here is a real oatmeal cookie someone bakes at home: maple brown sugar oatmeal cookies, brown sugar pecan, oatmeal cookies with cream filling, peanut butter, no-bake Charlie Browns, pumpkin chocolate chunk, apple cinnamon, cranberry, and banana oatmeal cookies with chocolate.

Quick Tips

  1. 1

    Soften butter, don't melt it

Leave the stick on the counter 30 to 45 minutes so it dents but holds its shape. Melted butter spreads the cookies thin and flat.

  2. 2

    Chill the dough

Thirty minutes in the fridge keeps the cookies thick and chewy, especially with pumpkin or apple dough that runs wet.

  3. 3

    Pull them early

Take the pan out when the centers still look soft, usually around 10 to 11 minutes. They finish setting on the hot sheet.

  4. 4

    Cool before filling

For the cream-filled cookies, let them sit at least 20 minutes. Warm cookies melt the filling right out the sides.
