Start with clean bowls

Let whites warm up
Set the egg whites out 30 minutes before you beat them. Room-temperature whites whip higher than cold ones.
Add sugar slowly
Beat in sugar a tablespoon at a time once soft peaks form, about 2 minutes total, so it dissolves and the meringue isn't gritty.
Seal it to the crust
Spread meringue so it touches the edge of the pie shell all the way around. That keeps it from shrinking back as it bakes.
