A quick, healthy weeknight sheet pan dinner — chicken sausage, baby potatoes, peppers, and broccoli in 30 minutes.

Ingredients

  • 1 lb smoked sausage, sliced
  • 1 lb baby potatoes, halved
  • 2 bell peppers, chunked
  • 1 red onion, chunked
  • 3 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1 tsp paprika
  • Salt and pepper
  • Fresh parsley

Instructions

  1. 1Preheat oven to 425°F.
  2. 2Toss potatoes with oil, seasoning, salt. Roast 15 min on sheet pan.
  3. 3Add sausage, peppers, onion to pan. Toss with remaining oil.
  4. 4Roast 20 more minutes until sausage is browned and veggies tender.
  5. 5Sprinkle with parsley and serve.
