Ingredients

  • 1.5 lbs skinless boneless chicken breasts or thighs
  • 1 Tbsp sesame oil
  • 4 cups broccoli florets
  • 2 cups cooked brown rice or quinoa
  • 1 Tbsp sesame seeds
  • 2 Tbsp sliced green onions
  • 2 garlic cloves
  • 2 Tbsp fresh ginger
  • 1 Tbsp raw honey
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup orange juice, freshly squeezed
  • 1/2 Tbsp cornstarch

Instructions

  1. 1Heat 1 Tbsp of sesame oil in a large skillet over medium-high heat. Add chicken and cook, stirring occasionally, for about 4-5 minutes until almost cooked through.
  2. 2Meanwhile, whisk together garlic, ginger, honey, soy sauce, orange juice, and cornstarch to make the teriyaki sauce.
  3. 3Pour the sauce over the chicken in the skillet, lower the heat, and simmer for 3-5 minutes until the sauce thickens and coats the chicken.
  4. 4Steam the broccoli until just tender, about 5-8 minutes.
  5. 5Divide the cooked brown rice among 4 containers, then top with steamed broccoli and teriyaki chicken.
  6. 6Garnish with sesame seeds, sliced chilies, and green onions. Serve and enjoy.
