Open in Pepper →A casserole is still the easiest way to feed everybody at once. These just swap in more zucchini, squash, cabbage, and green beans, so the pan comes out of the oven lighter but still bubbling at the edges.
Cooks on Pepper reach for these when they want the comfort of a baked dish on a Tuesday without a heavy plate afterward, or when the garden squash has gotten out of hand again.
Every recipe here is a real supper: Cheesy Eggplant and Zucchini Casserole, Spaghetti Squash Casserole, Crockpot Italian Zucchini Casserole with ground beef and green pepper, Beef and Cabbage Casserole, Lower Sodium Green Bean Casserole, and a simple Zuchinni-Squash Casserole with onion.
Salt the squash first
Toss sliced zucchini or eggplant with salt and let it sit 20 to 30 minutes, then pat dry so the casserole doesn't turn watery.
Drain the ground beef
Brown a pound of beef over medium-high heat for 6 to 8 minutes and pour off the fat before it goes in the dish.
Roast the spaghetti squash
Halve it, rub with a little olive oil, and roast cut side down at 400°F for about 40 minutes, then scrape into strands with a fork.
Let it rest 10 minutes
Pull the casserole from the oven and give it 10 minutes before serving so the layers set and cut cleanly.
