Rotisserie Chicken Salad

This has been my favorite chicken salad for a long time!

Ingredients

  • 1 Whole Rotisserie Chicken
  • 2 tbsp Olive Oil
  • 2 stalks Celery (chopped)
  • 3 whole Scallions (thin sliced)
  • 2 tbsp Fresh Dill
  • 1 tbsp Fresh Parsley
  • 1 cup Mayonnaise
  • 1 lemon Lemon juice
  • 1 tbsp Dijon Mustard
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

  1. 1Cube or shred up the meat of one whole rotisserie chicken or use the Air Fryer Chicken recipe I posted prior to this.
  2. 2In a large bowl mix all ingredients together and stir well. Cover and let chill in the fridge for at least one hour. Taste for seasoning and chow down once ready.
