Every recipe here leans on eggs, cheese, and vegetables instead of noodles: Low-Carb Eggplant Parm Rollatini with Pesto, Chicken Cordon Bleu casserole, Low Carb Lasagna, Ground Beef Zucchini Bake, Keto Pizza Crust made with canned chicken, and a shrimp and zucchini noodle meal prep for the fridge.
Salt the zucchini first
Slice zucchini or eggplant, salt it, and let it drain 20 to 30 minutes, then pat dry so your bake doesn't turn watery.
Squeeze the cauliflower rice
Cook frozen riced cauliflower over medium-high heat 6 to 8 minutes until the water cooks off, then press out any extra in a towel.
Cool before slicing
Let a low carb lasagna or casserole rest 10 to 15 minutes out of the oven so the cheese sets and the squares hold together.
Blot the canned chicken
Press canned chicken dry before mixing it with egg and Parmesan, then bake the crust 15 to 20 minutes until firm and golden.
