Ingredients

  • 8 Dill Pickle Spears
  • 4 tbsp Blazing Star Reaper Rub
  • 8 slices Bacon

Instructions

  1. 1So, technically this first step is optional, but it’s highly recommended… I started by adding 3 tbsp of the Blazing Star BBQ Reaper Rub to a jar of pickle spears and then let it sit in the fridge for a few days to infuse them with that Carolina reaper flavor.
  2. 2Wrap each pickle in a slice of bacon. I used thick-cut because it’s all I had on hand, but I recommend using regular-cut bacon.
  3. 3Sprinkle a little more Reaper Rub on top of the bacon (or whatever BBQ rub you have handy).
  4. 4Grill directly on the grates at 300°F for about 45 minutes, or until the bacon is crisped to your liking.
  5. 5Serve alongside ranch dressing and enjoy!

Why Lettuce Cups Beat Bread for Lunch

A tortilla wrap = 30+ carbs before any filling. Swap to butter lettuce, romaine boats, or a low-carb tortilla and the same lunch lands at 5g, with crunch the bread couldn't deliver.

Lettuce-cup formats also force lighter fillings — seasoned chicken, ground turkey, shrimp, BLT mixes — that hold their flavor better and pack cleanly for lunch.

The low-carb wraps the Pepper community returns to again and again are those that seamlessly integrate into busy household routines.

Quick Tips

  1. 1

    Butter or iceberg lettuce

Romaine cracks. Butter and iceberg cup the filling without breaking when you pick them up.

  2. 2

    Drain the filling well

Watery filling = soggy lettuce. Drain seasoned meat for 2 minutes before assembling.

  3. 3

    Sauce on the side

Lettuce wraps get sad fast under sauce. Dip-style or drizzle-at-the-table keeps them sharp.

  4. 4

    Stack components, don't pre-roll

Bring them flat in a container, assemble at the table. Pre-rolled wilts.
