Ingredients

  • Strawberries
  • Blueberries
  • Cherries
  • Watermelon
  • Carrots
  • 1-1.5 tbsp Veggie dip
  • While wheat bread
  • 1 slice Sargento White cheddar cheese
  • 2-3 slices Sliced turkey
  • Handful Arugula
  • Mayo
  • 2-3 Pear slices

Instructions

  1. 1Wash strawberries blueberries and cherries. Cut watermelon and strawberries up. Add to one slot in your container.
  2. 2Butter one side of each bread slice. You can toast the bread however you like.
  3. 3Add your favorite sandwich condiments. Add cheese, turkey slices, arugula and pear slices to the sandwich. You can turn the sandwich into a panini if you would like. Cut sandwich and add to another slot in your container.
  4. 4Add your veggie dip (I used marzetti ranch veggie dip, any kind will do). Add carrots to the dip. You can leave them whole or cut in half.
  5. 5Optional: fruit and vegetables are interchangeable. I use cucumbers and bell pepper slices sometimes as well. Any seasonal fruit works well in this meal prep!

Why the Best Lunch Is Something You Actually Cook

A brown-bag PB&J gets old by Wednesday — a real lunch, even a fifteen-minute grain bowl, resets the whole afternoon.

Cooks on Pepper batch a big pot of something on Sunday — soup, curry, a grain — and turn it into three different lunches by changing the toppings.

The recipes here are the community's midday rotation — the meals that keep the 3 p.m. slump from turning into a vending-machine visit.

Quick Tips

  1. 1

    Bring your own dressing

Pack dressing in a separate jar — a wilted salad by noon is the fastest way to abandon lunch.

  2. 2

Reheat with a splash of water

One tablespoon of water in the microwave-safe container keeps rice and pasta from turning to concrete.

  3. 3

    Batch grains on Sunday

Two cups of dry rice or farro is four days of lunch bases — one pot does the whole week.

  4. 4

    Pack contrast

One crunchy element, one creamy element, one bright acid — even leftovers eat like a fresh meal.
