Why a Real Salad Needs a Real Protein

A bowl of lettuce is not lunch — the salads that hold you until dinner have grilled chicken, salmon, chickpeas, or a soft-boiled egg on top.

Cooks on Pepper build the base around massaged greens, one crunchy element, one creamy element, and a citrus-forward dressing shaken in a jar.

The recipes here are the community's lunch rotation for the weeks they want to eat lighter without ending the meal hungry.

Quick Tips

  1. 1

    Massage kale and romaine

A drizzle of oil and a 30-second squeeze softens sturdy greens and cuts bitterness.

  2. 2

    Dress just before serving

Vinaigrettes wilt lettuce fast — toss at the table, not in the fridge.

  3. 3

    Roast one component

A hot roasted sweet potato or chickpea against cold greens is the texture contrast that makes a salad crave-able.

  4. 4

    Shake dressing in a jar

No whisk, no bowl — one jar, one shake, and the emulsion holds long enough to pour.
