Ingredients

  • 5 Bell Peppers
  • 1 lbs Ground beef
  • 1/2 Onion
  • 1 Tomato
  • to taste Garlic Salt
  • to taste Black Pepper
  • to taste Italian Seasoning
  • to taste Cheese (any kind) I used cheddar and mozzarella cheese.
  • to taste Paprika
  • 1 cup Cooked rice (any kind)

Instructions

  1. 1Coat a baking dish with cooking spray or oil; set aside. Preheat oven to 475°F. Cut tops off bell peppers; set tops aside. Using a paring knife, carefully remove the membranes and seeds from bell peppers. Arrange peppers about 2 inches apart in prepared baking dish. Place tops on empty peppers. Cover baking dish tightly with aluminum foil; bake 15 minutes. Remove from oven; cool slightly.
  2. 2Meanwhile, heat a large nonstick skillet over medium heat until hot. Add onion and garlic, once cooked add ground beef. Cook for 3 to 4 minutes, breaking beef into 1/2 inch crumbles and stirring occasionally. Stir in tomatoes, rice, Italian seasoning, garlic salt and black pepper; cook 3 to 4 minutes until heated through, stirring occasionally.
  3. 3Remove pepper tops. Divide beef mixture evenly among peppers. Bake in 475°F oven for about 25 minutes until bell peppers are tender. Pull out of oven and add your cheese on top, put back in oven, once cheese is melted or semi golden, it is ready to serve. Enjoy!
