Ingredients

  • 12 Gluten Free Tortillas
  • 1 lb Ground Beef
  • 1 cup Onion (chopped)
  • 1 cup Green Bell Pepper
  • to taste Salt
  • to taste Pepper
  • 2 cloves Garlic (minced)
  • 1 1/2 cups Mexican Cheese (we used dairy free cheddar)
  • 30 oz Red Enchilada Sauce

Instructions

  1. 1Preheat oven to 350 degrees.
  2. 2Heat a large skillet over medium heat
  3. 3Add ground beef, onions , and bell peppers to the hot skillet. Season with salt and pepper. Cook until ground beef is cooked through and onions and bell peppers are tender
  4. 4Stir in minced garlic and cook another minute or so
  5. 5Add 1/2 the enchilada sauce to the beef mixture. Stir and combine well
  6. 6Lay out gluten free tortillas and evenly distribute the beef mixture among them. Sprinkle half the cheese onto the mixture. Roll up the tortillas
  7. 7Add 1/2 of the remaining enchilada sauce to the bottom of a 9x13 pan
  8. 8Lay rolled up tortillas on top of the enchilada sauce. Pour remaining enchilada sauce on top of the rolled tortillas and top with remaining 1/2 of cheese
  9. 9Cover enchiladas with foil. Bake for 15 minutes
  10. 10Remove foil and bake for another 10 minutes
  11. 11Allow enchiladas to cool slightly before serving. Top with sour cream, green onions, cilantro, etc. and enjoy 😋
