Ingredients

  • 1 head Cabbage
  • 6 Oz Cream cheese
  • 3/4 cup Butter
  • 1.5 cups Heavy whipping cream
  • 1.5 lbs Smoked sausage
  • To your liking Parmesan cheese

Instructions

  1. 1In a baking dish combine all ingredients, and half of the parmesan cheese. I also added some shredded mozzarella for added cheesiness! Set aside sausage (or your meat of choice)
  2. 2Cover and bake at 400° for 30 minutes
  3. 3Brown sausage or meat of choice and set aside
  4. 4Take out the dish and add your browned meat and remaining cheese, put back in the oven for an additional 5-10 minutes.
  5. 5Remove from the oven, let cool, and enjoy!!
  6. 6**side note: I didn’t have sausage links this time around so I used some breakfast sausage. I also added Brussel sprouts, onions and asparagus to this dish as well (needed to use up some veggies) and it was absolutely delicious!!

Why Cabbage Is Low-Carb's Most Underrated Vegetable

Cabbage is 3g of carbs per cup, costs $3 a head, lasts two weeks in the fridge, and can be the bulk in stir-fries, soups, casseroles, and slaws. Almost nothing else gives you all five.

It also subs for pasta in alfredo and lasagna formats — shredded thin, cooked just until softened, it picks up cream sauces the way noodles do without any of the starch.

The low-carb cabbage recipes home cooks return to on Pepper prove that this economical vegetable can anchor a satisfying, carb-conscious meal any night of the week.

Quick Tips

  1. 1

    Cut against the core

Shred thin perpendicular to the stem. Long cabbage strips cook unevenly and feel like ribbons of disappointment.

  2. 2

    Fry with bacon, not oil

Bacon fat is the right pairing — adds depth that olive oil can't. Two strips' worth is enough for a whole head.

  3. 3

    Stir-fry hot and fast

5-7 minutes in a screaming hot pan keeps the crunch. Low and slow turns cabbage into sad mush.

  4. 4

Salt early for slaws, late for stir-fries

Slaws need 15 minutes of salt to soften; stir-fries need it at the very end so it doesn't water out.
