Creamy Sweet Potato Pasta with Crispy Sage

This pasta is dairy free but still creamy and hearty. The fried sage adds the perfect flavor and texture balance to this dish. You won’t want to skip trying this recipe out! Inspired by Delightful Delicious Delovely.

Ingredients

  • 1 lb Linguine or thick noodle
  • 2 tbsp Olive oil
  • 1/4 cup Fresh sage
  • 1 large Sweet potato (peeled and cubed)
  • 1 medium Sweet yellow onion (diced)
  • 4 Garlic cloves (minced)
  • 2 cups Vegetable stock
  • to taste Salt
  • to taste Black pepper
  • 1/4 tsp White pepper
  • 1/4 cup Vegetable oil

Instructions

  1. 1Cook and drain your pasta. Save about a cup of the hot pasta water. Toss the pasta with a drizzle of olive oil to keep it from sticking. Set aside.
  2. 2Over medium heat, add vegetable oil in a large saute pan and fry the sage. Be careful not to burn it. After 2 minutes or so, drain it on papers towels and set aside.
  3. 3In the same pan, add the onions. Once translucent, add the sweet potato and garlic. Stir for one minute and then add the vegetable stock. Bring to a boil and boil until your sweet potato is soft.
  4. 4Puree the sweet potato mixture. Add the salt and both peppers. Put the noodles in the pan you cooked the sweet potatoes in. Spoon only enough of the sweet potato puree to coat the noodles and make a nice sauce. If it gets too thick, stir in some of the reserved pasta water.
  5. 5Plate the pasta and add the fried sage on top.
