Ingredients

  • 1lb Ground Italian sausage
  • 1/2, diced White onion
  • 1 tbsp Minced garlic
  • 1 Jar of your favorite spaghetti sauce
  • 1 cup Heavy cream
  • 32 oz Chicken stock
  • 2 tbsp, separated Italian seasoning
  • Salt and pepper to taste
  • 1 cup Ricotta
  • 1/2 cup Grated parmesan
  • 1/2 cup Italian shredded cheese blend
  • 6-8, broken into bite sized pieces Lasagna noodles

Instructions

  1. 1In a large pot, on medium high heat, start browning your Italian sausage
  2. 2Once cooked, drain off any excess grease and add in onions
  3. 3Cook until translucent and then add in garlic and cook for 3-4 more minutes
  4. 4Season with 1tbsp of Italian seasoning and salt and pepper to taste
  5. 5Add in jar of spaghetti sauce and 32oz of chicken broth and bring to a boil
  6. 6Once boiling, add in lasagna noodles and cook until tender
  7. 7Once tender, add in heavy cream and stir
  8. 8For ricotta mixture: combine ricotta, parm, shredded italian blend, italian seasoning, salt and pepper, and mix well
  9. 9Pour your serving of soup, top with ricotta mixture, and enjoy!

    Brown the meat first

    Cook the sausage or beef 6 to 8 minutes until it's got real color, then drain off all but a tablespoon of fat so the broth doesn't turn greasy.

    Break noodles by hand

    Snap lasagna noodles into 2-inch pieces before they go in so every spoonful gets one and they cook evenly in about 10 to 12 minutes.

    Cook noodles separately for leftovers

    If you know you'll have a second night, boil the noodles on the side and add them to each bowl so they don't soak up all the broth in the fridge.

    Spoon the ricotta on top

    Stir a cup of ricotta with a handful of shredded mozzarella and a little parmesan, then drop a scoop in each bowl instead of mixing it into the pot.
