Ingredients

  • 2 packages Chicken flavored ramen
  • 2 tbsp Butter
  • measure with your heart Minced garlic
  • 1-2 Egg
  • 2 tbsp Low sodium soy sauce
  • Crushed red pepper flakes
  • 1-1 1/2 tbsp Sesame oil

Instructions

  1. 1Cook ramen according to directions on the package. Don’t add seasoning packets until later!
  2. 2While the noodles are boiling, add the butter and garlic to a wok and sauté on medium-low heat for 1-2 minutes.
  3. 3Crack egg(s) in the butter and garlic mixture and scramble until cooked thoroughly. Turn heat to LOW. Add cooked noodles to the wok without the pasta water; save the pasta water for later!
  4. 4Toss noodles in the garlic, butter, and egg mixture adding in the soy sauce, red pepper flakes, and seasoning packets.
  5. 5If you like your ramen to be brothy, add some of the pasta water into the wok. I personally prefer less broth, so I don’t add much (if any).
  6. 6Once you have removed the ramen from any heat, add in the sesame oil and top with more red pepper flakes and green onion if desired. Enjoy!

    Pull the noodles about 1 minute before the package says. They keep softening in hot broth or sauce.

    Save the noodle water

    Keep 1/4 cup of the starchy cooking water to loosen a thick butter-and-soy sauce so it clings to the noodles.

    Soft boil the eggs

    Drop cold eggs into boiling water for 7 minutes, then straight into ice water for 2 minutes before peeling.

    Add miso off the heat

    Stir 2 tablespoons of miso paste into broth after you cut the burner off so it stays smooth and doesn't turn grainy.
