Cook noodles a minute short

Save the noodle water
Keep 1/4 cup of the starchy cooking water to loosen a thick butter-and-soy sauce so it clings to the noodles.
Soft boil the eggs
Drop cold eggs into boiling water for 7 minutes, then straight into ice water for 2 minutes before peeling.
Add miso off the heat
Stir 2 tablespoons of miso paste into broth after you cut the burner off so it stays smooth and doesn't turn grainy.
