Muffins Are The Easiest Thing You Bake

A pan of muffins takes about as long as preheating and stirring, and it covers breakfast for three days. No mixer, no rolling, no waiting on dough to rise.

Cooks on Pepper reach for these on Sunday afternoon when the week looks full, or on a morning when the bananas on the counter have gone spotty and nobody wants cereal again.

Every recipe here is a muffin you can make in one bowl: hi protein breakfast muffins with oatmeal, gluten free banana bread muffins, Grams' blueberry muffins, crispy coffee cake muffins, strawberry cheesecake muffins, and pumpkin cream cheese muffins for fall.

Quick Tips

  1. 1

    Stop stirring early

Mix just until the flour disappears, about 10 to 12 strokes. Lumps in the batter are fine and keep the muffins tender instead of rubbery.

  2. 2

    Start the oven hot

Bake at 425°F for the first 5 minutes, then drop to 350°F to finish. That blast of heat gives you tall, bakery-style tops.

  3. 3

    Fill the cups full

Scoop batter nearly to the rim, not two-thirds up, so the muffins dome instead of spreading flat.

  4. 4

    Toss berries in flour

Coat blueberries or chocolate chips in a tablespoon of the dry mix before folding them in so they don't all sink.
