Ingredients

  • 12 oz Chicken sausage (Italian style)
  • 1 tsp Olive oil
  • 1/2 tsp Onion powder
  • 4 Garlic cloves (minced)
  • 1 cup Orzo
  • 1/2 tsp Red pepper flakes
  • 1/4 cup White wine (dry)
  • 2 cups Chicken broth
  • 1 cup Heavy cream
  • Half a small jar Sun dried tomatoes
  • 1/2 tsp Italian seasoning
  • Half a bag Baby spinach
  • 1/4 cup Parmesan & Asiago cheese (grated)
  • Salt & pepper

Instructions

  1. 1Slice the chicken sausage into about 1/4 inch pieces. Heat olive oil in a large saucepan over medium heat. Add the sliced sausage and cook for about 5 minutes stirring occasionally so all sides get browned.
  2. 2Mix in onion powder, minced garlic, uncooked orzo, and red pepper flakes. Let the garlic cook and the orzo toast for 1-2 minutes.
  3. 3Pour in the white wine then pour in the chicken broth and heavy cream. Add the sundried tomatoes, italian seasoning, and salt and pepper to taste. Cook for about 10-15 minutes or until the orzo is cooked through.
  4. 4Once the orzo is cooked, remove from the heat. Add the spinach and cheese and stir to combine. Add a lid and let it sit for a couple minutes until the cheese melts and the spinach wilts.
  5. 5Serve with more cheese on top!!

Italian Sausage Is a Head Start on Flavor

Every top-saved Italian sausage recipe on Pepper leans on the same shortcut — the sausage is already seasoned, so the base of the dish is done before the pan gets hot.

Home cooks who cook with it weekly reach for hot or sweet Italian, brown it hard for the fond, and build a one-pot dinner around whatever's in the pantry — pasta, orzo, beans, or greens.

The recipes here are almost all one-pot, weeknight-fast, and honest about being the kind of dinner you can put together after work.

Quick Tips

  1. 1

    Read the whole recipe first

Every top-saved recipe here has one step that trips people up. Reading ahead prevents the scramble.

  2. 2

    Season early and taste often

A pinch of salt at each stage builds real flavor — waiting until the end almost never fixes an under-seasoned dish.

  3. 3

    Rest before serving

Meat improves with a 5-10 minute rest after cooking — juices redistribute and the plate holds together better.

  4. 4

Trust your instrument, not the clock

Instant-read thermometers are cheap and end most of the "is it done?" arguments — 145°F for pork, 160°F for turkey, 195-205°F for shreddable cuts.
