Salt the cucumbers first
Slice cucumbers thin, sprinkle with salt, and let them sit on paper towels 15 minutes, then pat dry so the bread stays soft instead of soggy.
Soften the cream cheese
Leave cream cheese out 30 to 45 minutes before mixing so it spreads to the edges without tearing the bread.
Chill before you cut
Assemble, cover with a damp paper towel, and refrigerate 20 to 30 minutes so the fillings set and the slices cut clean.
Trim crusts last
Cut crusts off after filling with a long serrated knife, then slice into 2 triangles or 3 fingers for even little pieces.
