Freezer-Friendly Breakfast Sandwiches

A delicious and convenient breakfast option that can be prepared ahead of time and frozen for later use.

Ingredients

  • 8 large eggs
  • to taste salt
  • to taste pepper
  • 1 tbsp butter
  • 4 slices of cheese
  • 4 English muffins
  • 2 c. baby spinach
  • 4 servings breakfast meat

Instructions

  1. 1In a bowl, beat eggs with 1 Tbsp water and salt and pepper.
  2. 2Melt butter in a large non stick skillet over medium heat. Add spinach and cook until wilted.
  3. 3Add eggs to the spinach and cook, stirring with a rubber spatula every few seconds, to desired doneness.
  4. 4Place breakfast meat down on each muffin and top with egg/spinach, and then the cheese. Complete the sandwich with remaining muffin top.
  5. 5Wrap prepared sandwiches in a damp paper towel, then foil. Place in freezer bags and freeze for up to one month.
  6. 6When ready to cook, remove the foil (leave the towel) and microwave for 1 minute. Flip sandwich over and microwave another 1 minute to 30 seconds.
