Ingredients

  • 1 cup shredded corned beef
  • 1 cup, softened cream cheese
  • 1/2 cup sour cream
  • 1/2 cup Thousand Island dressing
  • 1 cup shredded Swiss cheese
  • 1/2 cup, drained sauerkraut

Instructions

  1. 1In the crockpot, combine all ingredients and mix until well combined.
  2. 2Cook on low for 2-3 hours, stirring occasionally until hot and melted.
  3. 3Serve with rye crackers or toasted baguette slices.

Corned Beef And Swiss Never Get Old

A Reuben is a whole dinner stacked between two slices of bread — salty corned beef, tangy sauerkraut, melty Swiss and that pink dressing running down the side. Once you have those four things in the fridge, supper is basically decided.

    Press the kraut in a strainer or wring it in a clean towel until no more liquid comes out — 30 seconds saves you a soggy sandwich or watery dip.

    Chill the cooked brisket at least 2 hours, then slice thin against the grain so it folds and layers instead of pulling apart.

    Butter the bread, not the pan

    Spread softened butter edge to edge on the outside of the rye and griddle 3 to 4 minutes a side over medium for an even brown crust.

    Cover sliders while they bake

    Foil the pan for the first 15 minutes at 350°F so the cheese melts through, then uncover 5 to 10 minutes to crisp the tops.
