This is similar to my pico recipe, but with a few extra ingredients!

Ingredients

  • 6-8, diced Roma tomatoes
  • 1, diced Large red onion
  • 1 lime Lime juice
  • 2 cloves Grated garlic
  • measure with your heart Cilantro
  • 1, seeded and diced Serrano pepper
  • 1 can, rinsed and drained Corn
  • 1 can, rinsed and drained Black beans
  • 1 tbsp Salt
  • 1/2 tbsp Pepper
  • 1 tbsp Cumin
  • 1/2 tbsp Chili Powder

Instructions

  1. 1Combine all ingredients and refrigerate for at least 30 minutes, then enjoy! This is such a good salsa with a good southwest kind of flavor and perfect for tex-mex dishes or by itself with chips!
