Open in Pepper →Fried rice is the dinner that makes leftovers feel like going out. A hot skillet, cold rice, butter, soy sauce, and whatever protein is in the fridge, and the kids come running before you call them.
Cooks on Pepper reach for this collection on nights when there's rice in the fridge from yesterday and about twenty minutes to work with, or when somebody's been asking for the steakhouse dinner again.
Every recipe here is a version worth cooking: Hibachi Style Fried Rice with shrimp and carrots, Blackstone Steak Fried Rice, Chicken Fried Rice on the Blackstone with canned peas and corn, Benihana Fried Rice, and hibachi steak with roasted Brussels sprouts on the side.
Use cold day-old rice
Rice cooked the day before and chilled at least 4 hours fries up separate instead of mushy. Spread fresh rice on a sheet pan for 30 minutes in the fridge in a pinch.
Get the pan screaming hot
Heat the skillet or griddle 3 to 4 minutes before anything goes in, so the rice toasts instead of steams.
Scramble the eggs separately
Push the rice aside, scramble 2 to 3 eggs in the open space for about 1 minute, then fold them back in.
Add butter at the end
Stir in 1 to 2 tablespoons of butter with the soy sauce in the last minute so it coats the rice instead of burning.
