Cold Rice Makes The Best Fried Rice

Fried rice is what happens when last night's rice meets a hot pan and whatever is in the fridge. It's fast, it stretches a little meat a long way, and nobody at the table complains.

Cooks on Pepper reach for these on nights when there's leftover rice sitting in the fridge and about twenty minutes to get dinner out, or when they want takeout without leaving the house.

Every recipe here is a real dinner: Hibachi Style Fried Rice with shrimp and carrots, Beef Fried Rice with cubed flank steak, Pineapple Shrimp Fried Rice served in the pineapple half, Kimchi Fried Rice, Beef Broccoli Fried Rice, and a plain chicken fried rice with frozen mixed vegetables.

Quick Tips

  1. 1

    Use day-old rice

Cook the rice a day ahead and chill it uncovered for at least 4 hours. Warm, fresh rice steams and clumps instead of frying.

  2. 2

    Get the pan hot first

Heat the skillet or wok over high heat for 2 to 3 minutes before the oil goes in, so the rice sizzles the second it hits.

  3. 3

    Scramble the eggs separately

Cook 2 or 3 eggs on one side of the pan, break them into pieces, and scoop them out until the last minute.

  4. 4

    Cook in one layer

Work in two batches if your pan is smaller than 12 inches, and let the rice sit undisturbed 60 seconds to crisp.
