Brown the beef first
Cook the ground beef over medium-high heat for 6 to 8 minutes until no pink remains, breaking it up as it goes.
Drain the grease
Tip off the fat after browning a pound of beef, or the casserole turns greasy under the cheese.
Soften the onion
Give a chopped onion 4 to 5 minutes in the beef drippings before it goes in the dish so it isn't crunchy after baking.
Add cheese at the end
Sprinkle the shredded cheddar over the top for the last 10 minutes of baking so it melts without browning too hard.
