Open in Pepper →A pound of ground beef, soy sauce, and brown sugar turn into dinner in about the time it takes rice to cook. It's the kind of meal kids ask for again on Thursday.
Cooks on Pepper reach for this collection on the nights nobody planned ahead — when the beef is thawed, the rice cooker is on, and everyone is hungry at 6.
Every recipe here starts with browned ground beef and that sweet-salty sauce: the classic Korean beef, the Korean Beef Bowl with garlic, a Korean Beef Rice Bowl with cucumber and ginger, Korean Beef Wraps in butter lettuce, and bulgogi meatballs with jasmine rice and green beans.
Drain the fat first
Brown the beef 6 to 8 minutes, then pour off the grease before adding soy sauce and brown sugar so the sauce clings instead of pooling.
Start the rice early
Jasmine rice needs about 15 minutes plus 10 to steam, so get it going before the skillet ever comes out.
Grate the garlic and ginger
Use a rasp grater on 3 cloves and a 1-inch piece of ginger so they melt into the sauce instead of burning in chunks.
Let the sauce reduce
Simmer the beef in the sauce 2 to 3 minutes until it turns glossy and coats the meat.
