Taco Rice

This meal is the perfect twist on Taco Tuesday! It’s easy, inexpensive, delicious, and filling. Win win!

Ingredients

  • 1 lb Ground beef
  • 1 packet Taco seasoning
  • 2 cups Minute rice
  • 2 cups Water or beef broth
  • 1 cup Mexican blend cheese
  • Tortilla chips (or Doritos)

Instructions

  1. 1Brown and drain ground beef then add taco seasoning.
  2. 2Add two cups water or broth and two cups of minute rice. Mix and bring to a boil.
  3. 3Reduce heat to low, cover with a layer of cheese (don’t mix!), and cover for 5 minutes.
  4. 4Serve over crushed tortilla chips and top with your favorite toppings.
  5. 5*I use 2lbs of ground beef and 3 cups of rice and broth so I can have leftovers for the kids’ lunches.

One Skillet, Taco Night, Done

Taco rice is what you make when everybody's hungry and you don't feel like standing over a stack of shells. Ground beef, taco seasoning, rice, cheese on top — it all cooks together and it all goes in one bowl.

Quick Tips

    Brown the beef first

    Cook the ground beef over medium-high for 6 to 8 minutes until no pink is left, then drain the grease so the rice doesn't turn greasy.

    Toast the seasoning

    Stir the taco seasoning into the hot meat for 30 to 60 seconds before adding any liquid — it tastes deeper than dumping it in at the end.

    Use broth not water

    Swap in a cup of beef or chicken broth for the water in the rice. Same cook time, a lot more flavor.

  4. 4

    Add cheese off heat

    Kill the burner, scatter on a cup of shredded cheddar, cover for 3 minutes and let it melt instead of scorching to the pan.
