Open in Pepper →A few tablespoons of butter melted down with minced garlic and a handful of parsley or rosemary turns plain chicken, shrimp, or noodles into something everybody at the table asks for again.
Cooks on Pepper reach for this collection on the nights the fridge is nearly empty and dinner still has to happen by six, because butter and garlic are almost always on hand.
Every recipe here leans on that pairing: garlic butter chicken, one-pot creamy beef and garlic butter pasta, garlic butter steak and potatoes skillet, spicy lemon garlic butter shrimp, CrockPot lemon garlic butter chicken thighs, garlic butter naan bread, and a browned rosemary garlic butter to keep in the fridge.
Add garlic last
Stir minced garlic into the melted butter for only 30 to 60 seconds before adding liquid or protein, since it burns and turns bitter fast.
Pat the shrimp dry
Blot raw shrimp with paper towels so they sear instead of steam, then cook 2 to 3 minutes total until just pink.
Save the pasta water
Reserve about 1/2 cup of the starchy cooking water and swirl it into the butter and garlic to make a sauce that clings to the spaghetti.
Rest the steak
Let petite steaks sit 5 minutes after cooking before slicing, then spoon the garlic butter and pan juices over the top.
