Honey Garlic Chicken

This is about to become one of your favorite week night meals. Tender chicken, covered in a honey garlic sauce pairs excellent with rice but would be good with any kind of potato as well!

Ingredients

  • 3 large Chicken breasts - cubed
  • 2 tbsp Flour (AP or GF)
  • 1 tsp Salt
  • 1 tsp Pepper
  • 3 tbsp Olive oil
  • 3 cloves Fresh chopped garlic
  • 3 tbsp Fresh parsley chopped
  • 4 tbsp Salted butter
  • 1 tbsp Honey
  • 1 tbsp Soy Sauce (GF or Regular)
  • 1 Medium lemon - quartered
  • 1 heaping tbsp Flour (AP or GF)
  • 1 cup Chicken broth
  • 2 tbsp Salted butter

Instructions

  1. 1Dry your cubed chicken with paper towels and toss with flour, salt and pepper in a bowl. Don’t be tempted to add more flour. I promise.
  2. 2Heat oil in non stick skillet over high heat until very hot but not smoking. Add your chicken, cook in one layer, for about 4 minutes, this will make a fantastic crust. Turn chicken pieces over and cook another 3-4 minutes.
  3. 3While chicken is cooking, combine parsley and garlic in a bowl. Add butter and parsley mixture in with the chicken and cook for 1 minute, being sure to coat the chicken. Use a slotted spoon to remove chicken and set aside on a plate. Be sure to leave the brown bits, parsley and garlic in the pan.
  4. 4Add remaining butter to skillet over medium heat until melted and add your flour and stir constantly for about a minute. Slowly, add your chicken broth. Then add your honey and soy sauce. Taste the sauce to see if you need salt and pepper. Cook down until gravy has thickened some.
  5. 5Serve over chicken with your favorite side dish. In my family we eat this with rice. Enjoy!

    Dry the chicken first

    Pat the cubes or thighs with paper towels before they hit the pan, or the flour coating turns gummy instead of browning.

    Cut pieces the same size

    Bite-sized cubes about 1 inch across cook through in 6 to 8 minutes and all finish at the same time.

  3. 3

    Add garlic last

    Stir in the minced garlic during the final 30 to 60 seconds before the honey and soy go in, so it doesn't scorch and turn bitter.

    Thicken with a slurry

    Whisk 1 tablespoon cornstarch or arrowroot into 2 tablespoons cold water, then stir it in and simmer 1 to 2 minutes until the sauce coats a spoon.
