Dry the chicken first
Pat the cubes or thighs with paper towels before they hit the pan, or the flour coating turns gummy instead of browning.
Cut pieces the same size
Bite-sized cubes about 1 inch across cook through in 6 to 8 minutes and all finish at the same time.
Add garlic last
Stir in the minced garlic during the final 30 to 60 seconds before the honey and soy go in, so it doesn't scorch and turn bitter.
Thicken with a slurry
Whisk 1 tablespoon cornstarch or arrowroot into 2 tablespoons cold water, then stir it in and simmer 1 to 2 minutes until the sauce coats a spoon.
