Melt on low heat
Keep the burner on low and stir the marshmallows 3 to 5 minutes until just smooth. High heat makes them stiff once they cool.
Butter your hands
Rub a little butter or nonstick spray on your fingers or the back of a spoon before pressing the mix into a 9x13 pan.
Press gently
Pat the cereal into the pan just enough to level it out. Packing it down hard gives you a dense, hard square instead of a soft one.
Cool before slicing
Let the pan sit at room temperature 30 minutes before cutting, and use a buttered knife for clean edges.
