Three Ingredients And Twenty Minutes Flat

Butter, marshmallows, cereal. That's the whole base, and once you know it by heart you can turn it into just about anything sitting in your pantry.

Cooks on Pepper reach for these when somebody mentions a bake sale the night before, when the kids need something after school, or when a potluck needs one more pan of something sweet.

Every recipe here starts from that same melted-marshmallow base and goes its own way — Chai Spiced Rice Krispie Treats, Cookies & cream, Pumpkin, Banana Pudding, peanut butter, double chocolate, and Millionaire's with a layer of caramel.

Quick Tips

  1. 1

    Melt on low heat

Keep the burner on low and stir the marshmallows 3 to 5 minutes until just smooth. High heat makes them stiff once they cool.

  2. 2

    Butter your hands

Rub a little butter or nonstick spray on your fingers or the back of a spoon before pressing the mix into a 9x13 pan.

  3. 3

    Press gently

Pat the cereal into the pan just enough to level it out. Packing it down hard gives you a dense, hard square instead of a soft one.

  4. 4

    Cool before slicing

Let the pan sit at room temperature 30 minutes before cutting, and use a buttered knife for clean edges.
