Brown the beef first
Cook 1 to 2 pounds of ground beef over medium-high heat until no pink shows, about 8 minutes, then drain the grease so the chips stay crisp.
Add chips at the end
Stir or layer the Fritos in during the last 5 minutes, or spoon the chili over them at the table, so they hold their crunch.
Season the chili hard
One packet of taco seasoning or a good teaspoon each of chili powder and cumin keeps canned chili from tasting flat.
Melt the cheese covered
Sprinkle 2 cups shredded cheese over the top, cover, and let it sit off the heat for 3 to 4 minutes until it's fully melted.
