  1. 1Dice the apples. In a large sauce pan melt 1 tablespoon of butter, add the chopped apples, brown sugar, lemon juice, corn starch, water, and spices.

  5. 5For the crumb topping, stir together flour, oats, brown sugar, and cinnamon. Add melted butter and whisk to make the crumbs, set aside.
  6. 6For the cheesecake filling, beet softened cream cheese with sugar, vanilla, and flour. Add one egg and mix until just combined. Spread the mixture in the pre-baked crust.
  7. 7Next spread the apples over the cheesecake layer.
  8. 8Top with the crumb topping and bake for 30 to 35 minutes.
  9. 9Top with vanilla ice cream caramel and Cool Whip when serving. Enjoy!

The Dessert (and Dinner) That Never Left

Pie is one of the few dishes that works both ways — a savory pot pie for dinner, a fruit or cream pie for dessert, and either one lands on the table like an event.

Cooks on Pepper open this collection year-round — apple in fall, key lime in summer, chicken pot pie whenever it's cold outside.

Every recipe here is either a proper dessert pie or a full-dinner savory pie — no in-between, no half-effort tarts, just the crust-and-filling classics done right.

Quick Tips

  1. 1

    Cold butter, cold water

The two rules of flaky crust — cold ingredients, minimum handling.

  2. 2

    Blind bake for wet fillings

Fruit and cream fillings need a par-baked crust — otherwise the bottom goes soggy.

  3. 3

    Egg wash the top crust

Beaten egg with a splash of water gives you the golden shine that store-bought pies have.

  4. 4

    Cool before slicing

A hot pie slices into soup — 2 hours minimum on the counter before the first cut.
