Bake the crust bare first
Slide the plain flatbread into a 425°F oven for 4 to 5 minutes before topping so it crisps instead of going soggy under the sauce.
Go light on sauce
Two to three tablespoons is plenty for one flatbread — any more and the middle stays limp no matter how long you bake it.
Cook toppings ahead
Bacon, chicken, and onions need more time than the 10-minute bake, so cook them through first. Caramelizing onions takes a slow 25 to 30 minutes in butter.
Slice on a board
Move the flatbread off the hot pan and let it sit 2 minutes before cutting, so the cheese sets and the slices hold together.
