Heat the pan first
Put your sheet pan or stone in the oven while it preheats to 475°F, then slide the pizza on. The bottom crisps in the first 2 minutes instead of steaming.
Let the dough rest
Give homemade dough 10 to 15 minutes on the counter after mixing so it stops snapping back when you stretch it.
Go easy on sauce
About 1/3 to 1/2 cup of sauce on a 12-inch crust is plenty. More than that and the middle turns soggy.
Cook toppings ahead
Brown sausage and drain it, and shred chicken before it goes on. Raw meat won't finish in the 12 to 15 minutes the crust needs.
