Par-bake the crust first
Bake biscuit or pizza dough 8 to 10 minutes at 400°F before adding toppings so the middle doesn't stay doughy under the gravy.
Scramble eggs soft
Cook the eggs only about 2 minutes, until barely set, since they'll finish in the oven and turn rubbery if fully cooked twice.
Drain the sausage well
Brown 1 pound of sausage and pour off the grease before it goes on the crust, or the whole pizza slides apart when you cut it.
Make wells for whole eggs
If you're cracking eggs on top, press 4 shallow dents in the cheese first so they stay put and bake 10 to 12 minutes for runny yolks.
