Wow! I can’t believe how quick and easy this was to prepare! This meal prep consists of sliced chicken breast, bell peppers, and onions cooked in a pre-made fajita seasoning blend with red rice, popcorners, flour tortillas, sour cream, and a lime wedge.

Open in Pepper →Chili powder, cumin, paprika, onion and garlic — that little jar is the difference between plain chicken and peppers and something the whole table wants seconds of. Mix it yourself and you know exactly what's in it, and you can make it as mild or as smoky as your family likes.
Cooks on Pepper reach for this collection on the nights when supper has to be fast and nobody wants another plain chicken breast. It's the Tuesday fix, the Sunday meal prep, the let-the-slow-cooker-do-it day.
Every recipe here leans on that seasoning: Chicken Fajitas Meal Prep for the week ahead, 20 minute sheet pan fajitas and Sheet Pan Chicken Fajitas for one-pan nights, Crock Pot Chicken Fajitas, Steak Fajita Tacos, Queso Steak Fajita Skillet, Blackstone Chicken & Skirt Steak Fajitas, plus a Fajita Seasoning Mix and a no salt, no sugar version.
Mix a double batch
Stir up 6 tablespoons of chili powder, cumin, paprika, onion and garlic powder at once and keep it in a jar — about 2 tablespoons seasons a pound of meat.
Slice meat against grain
Cut steak or chicken into 1/4-inch strips across the grain so it stays tender instead of chewy.
Crowd nothing on the pan
Spread chicken and peppers in one layer on a large sheet pan at 425°F so they roast and char instead of steaming.
Bloom the spices in oil
Toss the meat with 1 tablespoon oil and the seasoning before it hits the heat so the chili powder and cumin wake up.
