Open in Pepper →A good steak doesn't ask for much. Salt, pepper, garlic, maybe an hour in a marinade, and you've got dinner that tastes like you tried harder than you did.
Cooks on Pepper reach for these when steak is on sale, when the grill is already going, or when it's Friday and nobody wants another chicken dinner.
Every recipe here is either a rub-and-sear or a soak-and-grill: Garlic Butter Steak and Potatoes Skillet, Garlic Butter Steak Bites, Gordon Ramsay Steak Marinade, Flavor-Packed Steak Marinade, and a T-Bone Steak Marinade for the big cuts.
Salt it early
Season with salt at least 40 minutes ahead, or right before it hits the pan. In between, the surface is wet and won't brown.
Pat the steak dry
After a marinade, blot both sides with paper towels. Wet meat steams instead of searing.
Get the pan smoking
Heat cast iron 4 to 5 minutes over medium-high before the steak goes in, and don't move it for the first 3 minutes.
Rest before slicing
Let steak sit 5 to 10 minutes on a board, then cut against the grain so the juices stay in the meat.
