A Good Burger Starts With Seasoning

A burger is only as good as what you put on the meat and what you spread on the bun. Salt, pepper, a little onion powder, and a sauce worth licking off your thumb will do more than any fancy ingredient.

Cooks on Pepper reach for this collection on the nights everybody wants something different — burgers stretch a pound of ground beef, and the sauce keeps the picky eaters happy.

Every recipe here is a burger you can actually make after work: Copycat In-N-Out Burger Sauce, Smash Burgers with thin yellow onion, a Classic Cheeseburger with Burger Sauce, a quick burger sauce with Dijon, and Refried Bean Burger Patties with jalapeño.

Quick Tips

  1. 1

    Season after shaping

Salt the outside of the patty right before it hits the pan, not the bowl. Salted ground beef sitting 30 minutes turns springy instead of tender.

  2. 2

    Get the pan smoking

Heat cast iron over medium-high for 5 minutes before the meat goes down. That's what gives a smash burger its brown, lacy edges.

  3. 3

    Smash once and leave it

Press the ball flat within the first 10 seconds, then don't touch it for about 2 minutes. Pressing later just squeezes the juice out.

  4. 4

    Mix sauce ahead

Stir mayo, ketchup, and relish together and chill at least 30 minutes so the flavors settle. It keeps about a week in the fridge.
