Chicken Fajitas Meal Prep

Wow! I can’t believe how quick and easy this was to prepare! This meal prep consists of sliced chicken breast, bell peppers, and onions cooked in a pre-made fajita seasoning blend with red rice, popcorners, flour tortillas, sour cream, and a lime wedge.

Ingredients

  • 4 Tbsp Neutral Oil
  • 1/2 ea Red Bell Pepper - thinly sliced
  • 1/2 ea Orange Bell Pepper - thinly sliced
  • 1/2 ea Yellow Bell Pepper - thinly sliced
  • 1 Yellow onion - thinly sliced
  • 1 # Chicken Breast - thinly sliced
  • 1/2 packet Fajita Seasoning Blend
  • 1/4 cup Water
  • 2 cups Rice - any
  • 4 Flour Tortillas
  • 1/2 bag Popcorners Chips
  • 8 oz Sour Cream
  • 1 Lime - quartered

Instructions

  1. 1In a large frying pan, bring heat to medium, add 2 Tbsp oil, sauté peppers and onions for 10 minutes, remove and set aside
  2. 2Add 2 Tbsp of oil and sear the chicken for 4 minutes, tossing occasionally
  3. 3Add fajita blend and water, mix well, bring to a simmer, let it cook for 5 minutes, stirring occasionally
  4. 4Add back the peppers and onions, toss to combine ingredients, remove from heat, let it cool for 5 minutes
  5. 5Assemble meal prep containers with red rice (recipe can be found on my page), fajita chicken, peppers and onions, and a lime wedge. Prep some tortillas, chips, and sour cream. Enjoy!

Chicken And Peppers In One Hot Pan

Fajitas are the dinner you can make with what's already in the fridge — chicken, a couple of bell peppers, an onion, and whatever tortillas are left in the bag. The sizzle when the peppers hit the pan is half the reason anybody comes to the table.

    Get the pan hot first

    Heat the skillet over high for 2 to 3 minutes before the oil goes in, so the peppers char instead of steaming.

    Slice chicken against the grain

    Cut breasts into strips about 1/2 inch thick across the grain — they stay tender and cook through in 6 to 8 minutes.

    Cook in two batches

    Crowding drops the heat and gives you gray chicken. Do the chicken first, set it aside, then the peppers and onion.

    Warm the tortillas

    Thirty seconds a side in a dry skillet, or stack 8 in foil and warm at 350°F for 10 minutes so they fold without cracking.
