Open in Pepper →A drop biscuit skips the counter mess entirely. You stir the dough, scoop it with a spoon, and the craggy tops bake up crisp while the middles stay soft.
Cooks on Pepper reach for these when supper is soup or chili and there's nothing to sop it up with, or when company is coming and the oven is already hot.
Every recipe here is a drop biscuit of some kind: Jalapeño Cheddar Drop Biscuits with chorizo, Cheddar Garlic Drop Biscuits made with baking mix, Honey Cinnamon Butter Drop Biscuits, Southern Drop Biscuits with warm heavy cream, and Holiday Buttermilk Drop Biscuits with ranch seasoning.
Keep the butter cold
Grate frozen butter on a box grater and work it into the flour in under a minute, so the pieces stay firm and steam into layers.
Stir just until shaggy
Mix only 10 to 15 strokes, until no dry flour shows. Overworked dough bakes up tough and flat.
Bake them close together
Drop mounds about 1 inch apart on the pan so they lean on each other and rise taller instead of spreading.
Brush the tops with butter
Melt 2 tablespoons of butter and brush it over the biscuits the minute they leave the oven, while the tops are still hot enough to soak it in.
