Chicken Pot Pie with Cheddar Bay Biscuits

A delicious twist on traditional chicken pot pie using Cheddar Bay biscuits instead of pie crust.

Ingredients

  • 1 rotisserie chicken
  • 1 bag frozen mixed vegetables
  • 2 cans cream of chicken soup
  • 2 tablespoons sour cream
  • 1/4 cup milk or heavy cream
  • to taste salt
  • to taste pepper
  • 1 box Cheddar Bay biscuits

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Shred the rotisserie chicken.
  3. 3In a large mixing bowl, combine shredded chicken, frozen vegetables, cream of chicken soup, sour cream, milk or heavy cream, salt, and pepper. Mix well.
  4. 4Pour the mixture into a baking dish.
  5. 5Place the Cheddar Bay biscuits on top of the chicken mixture.
  6. 6Bake in the preheated oven until the biscuits are golden brown, about 20-25 minutes.
