Crockpot Chicken and Dumplings

Crockpot Chicken and Dumplings are the ultimate comfort food, loaded with of shredded chicken, carrots, celery, onions, and lots of spices with canned biscuit dumplings. It's such an easy dish to make, with a few store bought ingredients, and a slow cooker! A meal the whole family is sure to love.

Ingredients

  • 1 Onion
  • 3 Chicken Breast (Boneless/Skinless)
  • 2 cans Cream of chicken
  • 2 cup Chicken stock
  • 2 stalks Celery
  • 2 Carrots
  • 1 can Corn
  • 2 tsp Dried Oregano
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder
  • 1/2 tsp Black Pepper
  • 1 tsp Salt
  • 1 tsp Basil
  • 1 Chicken bullion cube
  • 1 Can refrigerated biscuits

Instructions

  1. 1Place the diced onion into the bottom of the slow cooker along with the celery, carrots, and corn, and stir everything together.
  2. 2Place chicken breasts on top of the diced onion. Sprinkle herbs and salt and pepper over the top of the chicken breasts.
  3. 3Pour cream of chicken soup and chicken broth over the top of the chicken breast. Spread evenly over the top of the chicken. Cover the slow cooker with the lid and cook for 3 hours on high, or about 4 to 5 hours on low.
  4. 4Remove the chicken breasts and shred the chicken with two forks. Return the chicken to the slow cooker.
  5. 5Cut raw biscuits into quarters. Sprinkle biscuits over the top of the chicken mixture.Cook for another 30 mins on high with the lid on or until biscuits are cooked through.

    Simmer, don't boil

    Keep the broth at a low simmer, around a lazy bubble, so the dumplings cook through in 12 to 15 minutes without falling apart.

    Keep the lid on

    Once the dumplings go in, cover the pot and leave it alone for at least 10 minutes — the steam is what puffs them up.

    Use rotisserie chicken

    One store rotisserie chicken shreds down to about 3 to 4 cups of meat and saves you 30 minutes of cooking.

    Thicken at the end

    If the broth is thin, stir 2 tablespoons flour into 1/4 cup cold broth and pour it in, then simmer 5 more minutes.
