Drop dumplings on simmer
Keep the broth at a low simmer, not a rolling boil, or the dumplings break apart. Drop them in by heaping tablespoons and leave them alone.
Cover for the last 15
Once the dumplings are in, put the lid on and cook 15 minutes without peeking so the steam sets the tops.
Cut biscuit dough small
Quarter each refrigerated biscuit before dropping it in — big pieces stay doughy in the middle.
