Press the mint, don't shred
Muddle 8 to 10 mint leaves with gentle pressure for about 10 seconds. Tearing them up releases bitterness and leaves green flecks in your glass.
Squeeze the limes fresh
One medium lime gives about 1 tablespoon of juice, so plan on two limes per pair of drinks. Bottled juice tastes flat next to it.
Make simple syrup ahead
Stir 1 cup sugar into 1 cup hot water until clear, then chill. It keeps 3 to 4 weeks in the fridge and mixes in far better than raw sugar.
Freeze the fruit first
For daiquiris, use 1 to 2 cups of frozen strawberries or blueberries instead of ice so the drink stays thick and doesn't water down.
