Start the bacon cold
Lay 6 to 8 slices in a cold skillet and bring the heat up slow so the fat renders out instead of burning. Cook the cabbage in that grease.
Cut the cabbage big
Chop into 2-inch pieces, not shreds. Big pieces hold up to 25 minutes of cooking without turning to mush.
Brown the sausage first
Give smoked sausage or kielbasa 4 to 5 minutes cut-side down before the cabbage goes in, then stir those browned bits into the pot.
Add a splash of broth
Pour in about 1/2 cup of chicken broth, cover, and let the cabbage steam 10 minutes before you uncover it to cook off the liquid.
