Every recipe here is a cabbage casserole, just built different — the classic one with ground beef and onion soup mix, Keilbasa Cabbage Casserole, Beef and Cabbage Casserole with garlic, a creamy cabbage casserole with butter and Vidalia onion, a one-pot version, and a Pierogi Cabbage Casserole with sweet onion.
Salt the cabbage first
Toss the chopped cabbage with about a teaspoon of salt and let it sit 15 minutes, then pat dry so the casserole doesn't turn watery.
Brown the beef hard
Cook the ground beef 6 to 8 minutes until it's got real brown bits, then drain the fat before it goes in the dish.
Cut cabbage in wedges
Chop into 1- to 2-inch pieces instead of shredding so it holds its shape through 45 minutes in the oven.
Uncover at the end
Bake covered with foil for 30 minutes, then pull the foil and give it 15 more so the top browns.
