Salt the eggplant first
Sprinkle sliced eggplant with salt and let it sit 20 to 30 minutes, then pat dry so the casserole doesn't turn watery.
Dry the cauliflower well
Roast or steam the florets, then blot them on a towel for a minute or two before mixing with cream cheese and sour cream.
Crisp the bacon separately
