Open in Pepper →Cowboy casserole is what you make when the fridge is thin and the table is full. Ground beef, corn, a can of soup, and a bag of tater tots on top — it comes together with what's already in the pantry, and nobody leaves hungry.
Cooks on Pepper reach for these on the nights ballgames run long, when the slow cooker needs to do the work before anyone walks in the door, or when a neighbor needs supper dropped off.
Every recipe here is a version worth keeping: the classic Cowboy casserole with beef and cream of chicken soup, a Crockpot Cowboy Casserole made with Italian sausage and onion, a lighter turkey and kidney bean COWBOY CASSEROLE, Cowboy Casserole with Beef & Tater Tots, and a Cheesy Crockpot Cowboy Casserole built on potatoes and beans.
Brown the beef first
Cook the ground beef 6 to 8 minutes until no pink remains, then drain the grease so the casserole doesn't turn soupy.
Keep tater tots frozen
Lay the tots on top straight from the freezer in a single layer so they crisp instead of steaming.
Drain the corn well
Pour off every bit of liquid from the can of corn and beans, or you'll add a half cup of water you didn't want.
Add cheese at the end
Stir in half the shredded cheese and sprinkle the rest over the top during the last 10 minutes so it melts without turning greasy.
